
On The Go Egg Cups: Leeks, Goat Cheese, Mushrooms
and Black Truffle Oil
Ingredients:
1 head of maitake mushrooms, chopped (or mushroom of choice)
8 organic eggs
1/2 cup of chopped leeks
1/4 cup of crumbled goat cheese
black truffle oil
pinch of salt and pepper to taste
Directions:
Preheat oven to 375.
In a large bowl, whisk eggs together. Add mushrooms, leeks, salt and pepper.
Pour egg mixture into muffin tins to about two thirds full. Sprinkle each with goat cheese and a drop of truffle oil.
Bake in the oven for 25-30 minutes.
